4Excellent knife for right-handed people  Jul 17, 2009
The Shun Steel series is identical to the Classic series, but with a steel handle. As such, this is a fantastic knife. The Steel line is being discontinued, so they are some of the best buys on the market at cut-rate prices. Certainly the best buy from a non-specialty store.

Just be aware that the D-shape handle is designed for right-handed people only. Similarly, like most Japanese knives, the blade is ground with a right-handed bias. Shun also sells a left-handed version, but this is not it. Amazon should note that in the description.

2cutting edge rusted quickly  Jan 29, 2009
In spite of caring for this knife properly, the cutting edge rusted quickly...must have been simply a defective knife.

5fantastic investment  Dec 21, 2008
this is my most used knife ever! it is sharp, comfortable to handle. I can't say enough good things about it. i am not a professional chef by any means, and I have no idea how to sharpen this knife-but I recommend getting it professionally sharpened as it is on a different angle than most other kitchen knives.
Don't let the price deter you-it's worth every penny!

5Very Versatile Knife!  May 23, 2008
If you're reading this review, you are probably familiar with Shun knives so I won't elaborate on how great/sharp they are.

This Santoku is excellent! It's just the right size for most chopping and mincing jobs. Also, it's just small enough that I use it as my "utility" knife when I need to cut something small (for slicing up limes). I also use it as a carving knife for smaller cuts of meat (chicken breast, sausage).

I'm not sure if the grantons (scallops) really offer much advantage. I still get some food bits sticking on the blade (not sure anything can help this). I did notice a repeated "swooshing" sound as I carved chicken breasts, no doubt from the creation of multiple air pockets. The grantons do look nice, and don't really get in the way when you are using the flat end of the blade to "squish" something (like turning minced garlic into a paste).

Also, this santoku does have a bit of a "rocker" to it. What I mean is that there is a slight curve from the belly to the tip of the blade. This allows you to use it like a traditional chef's knife by "rocking" the blade, but it does a great job with chopping as well.

The stainless handle is well constructed, has a good heft (but not too heavy), and is all one piece with no seam. If you're a germaphobe (like I am), this is a great knife for you. The handle is not like the handles on most stainless knives on the market, that are SO hollow that the knife loses its balance. The heft of the Shun handle (though slightly hollowed) keeps your knife nice and balanced.

I used to be a strict chef's knife user, but this knife has become my most frequently used. I love the knife's construction and razor sharp edge as it cuts through most things with ease and can make any knife job fun and easy.

5Fantastic knife.  May 05, 2007
I work in a professional kitchen in La Jolla, California and this knife has been better than I even expected. It was almost too sharp! I had previously owned global knives but once the edge was lost on them it seemed impossible to get it back. I have had this knife for almost three months and haven't had the need to sharpen it yet, even with everyday, intensive use. If you are looking for the perfect balance of weight, comfort, sharpness, and functionality, this is a great buy.
